This is a traditional Cameroonian highly addictive treat! Groundnuts with a crunchy sugar-coated layer make the perfect on-the-go snack. They’re super easy to make and e ideal for game day, family party, or movie night.
Groundnuts (with skin)
2 cups groundnuts with skin (I use the large ones)
1/4 cup water
1/2 cup granulated sugar
1/2 tbs ground nutmeg (add 1/2 tbs more if desired)
1/2 tbs salt (add 1/2 tbs more if desired)
1 tbs vanilla extract
Roast the Groundnuts
Roast nuts in a wok, frying pan, or baking sheet in the oven until well roasted. Stir to prevent burning. I like to add 1/2 tbs kosher salt in this step.
In a separate pan, combine water, sugar, nutmeg, salt (1/2 tbs), and vanilla extract. Bring to a low boil.
Add the liquid mixture to the nuts and stir until the liquid has evaporated.
Continue to stir until the nuts are completely dry.
Do not allow nuts to caramelize.
Pour onto a baking sheet and cool. The nuts should have a sugary-looking crust.
